After attending the Culinary Institute of America, Steve Ells became a line cook at a restaurant by the name of Stars in San Francisco. While working at the restaurant Steve observed the high demand for fast taquerias and burritos. He took what he learned as a line cook and decided to head to Denver Colorado. With a loan from his father and a mission, Steve opened the first Chipotle Mexican Grill near the campus of The University of Denver. The name Chipotle comes from the Nahuati name for a smoked and dried jalapeno pepper.
Ells knew that the store would need to sell 107 burritos a day in order to make a profit. After one short month, Chipoltle was selling over 1,000 burritos a day! Ells had originally planned to use funds from his first Chipotle to open a fine-dining restaurant. Instead, he put focus on opening more Chipotle Mexican Grills due to the potential for further success. By 1998 there were Chipotle 16 restaurants, all of which were located in Colorado! Now, there are chipotle locations across the United States! In 2023, there were 2,768 Chipotle locations to be exact!
